Easy Camp Meals

Whether you're an experienced camp cook or a beginner you're always on the lookout for easy camp meals. You may have your old standbys that you take every year that could use some livening up or just want something different for this year's camping trip. If it's your first time as camp cook you probably want some extra help and ideas on how to set up your kitchen and what you need to take along.

I started out being the camp cook by default. I was the least experienced camper and had no gear other than a sleeping bag. Everyone pitched in and lent me gear on the condition that I do the cooking. Sounded like a plan to me! I love to cook and feed people and try out new recipes. There was only one catch, I had never cooked "in the wild" over a portable propane stove. How tough could it be?

I found out it really wasn't that difficult, but it did take practice and planning, especially planning. That was one of the biggest keys I found to make camp cooking simpler for me; planning the meals ahead of time, home preparation and packaging foods together as a meal are a few of the tricks and tips I worked out for myself.

Ending up eating an overcooked or not cooked enough whatever in the dark when you're long past caring what it even tastes like because you're so hungry and grumpy makes for an uncomfortable evening. Having a tasty meal to sit down to after a long busy day makes the day continue on into a relaxed and enjoyable evening of sitting around the campfire and makes for fun memories.

Camping Meals and Recipes - Get 3 Delicious Outdoor Recipes

Are you going camping and don't know what kind of food to prepare? Well, baked stuffed fish, best peach cobbler and biscuit and pancake mix are 3 easy, quick and delicious outdoor recipes you can use to prepare a great meal.

I've listed the recipes below for you to try out:

1.Baked Stuffed Fish

Ingredients:

- White fish,enough for 4 - 6
- 2 c Soft bread cubes, about 1/2 cubes
- 1 Small onion, chopped fine
- 1 Green pepper, blanched and, Chopped
- 8 oz Imitation crabmeat
- 1/4 c Lemon juice
- 1/2 c Hellmans mayo
- Salt & pepper, To Taste

Directions:

- Mix all these ingredients together and roll up in fish fillets,
securing them with toothpicks.
- Divide it among four or five good-sized pieces. Bake at 400 for 30 minutes.
- During last 10 minutes pour newburg sauce over fish.
- It's good with flounder, but any white fish will do.
- I've used large cod and catfish fillets and butterflied them.
- Just enough so you can roll it up over the stuffing.

2. Best Peach Cobbler

Ingredients:

Filling

- 3 T Sugar
- 2 qt peach slices, Canned
- 4 t Baking powder
- 3/4 c Sugar
- 6 T Lard (or butter)
- 1/4 c Water
- 3/4 c milk cut half-, Canned
- 3 t Corn starch strength with water (just Topping enough to moisten dough)
- 2 c Flour

Directions:

Filling: Dissolve corn starch in water; add mixture to peaches and juice in a large, warm Dutch oven; stir well; sprinkle sugar on top; cover and allow to simmer lightly while topping is prepared.

Topping: On a floured board, turn out a soft dough; pat down to 1/2" thick; cut into strips 1/2" wide and place criss-cross atop peach mixture; cover and cook approximately 20 minutes until golden brown.

Serve with Campfire Coffee. Serves approximately 18.

3. Biscuit And Pancake Mix

Ingredients:

- 9 c Flour, Shielded
- 4 t salt
- 1 / 3 c baking soda
- 1 3 / 4 c Shortening, Vegetable
- 1 c of milk, powder

Directions:

- Chill shortening.
- Sift all dry ingredients.
- Reduction Cut into flour mixture until coarse like corn meal.
- Keep the store, well covered, in a cool, dry place.

Use for pancakes, biscuits, cakes, cobbler or whatever you make from a mix of packaged cookies. All you need is water.

For the pancakes, add 1 TB of each sugar and powdereggs to each cup of mix.

Quick and Easy Arabian Pea Stew

I write simple recipes to show that you can indeed make tasty food using real ingredients and often just as fast as heating a manufactured meal in the microwave. This easy pea Yakhni is just such an example. Yakhni means stew served over rice. I used to make this regularly for my children as they were growing up. It was simple and easy and much healthier than most prepared foods. The special Arabian spices of cinnamon and allspice make any Yakhni delicious to taste. The dill goes particularly well with the peas. Children love this food, because the spices taste sweet and the vegetables are cooked with the meat, so it all blends well together and tastes better than relatively bland vegetables cooked separately.

To make this dish you need:

1 cup (240 ml) rice

2 cups boiling water

Salt

Half an onion, chopped

Some fat or oil for cooking

2 Finely chopped carrots (hint: slice them thinly, that works and is quick)

½ kg Mince meat

2/3 kg Peas (fresh shelled or frozen)

15 g Fresh dill, cut into medium bits

Salt, pepper, cinnamon, and allspice

A little more water

Serves 2. Just double the ingredients if for four people. Some people prefer less rice and more stew. If so, simply adjust to your preferences. If you are vegetarian and adapting this recipe to a meat-free version, it is best to omit the allspice.

Put the rice, a sprinkling of salt, and 2 cups of water on high heat until it starts to boil. Reduce to a simmer and cover. Cook for the length of time recommended on the packet. When fully cooked, take off the heat, fluff up with a fork and cover for a few minutes. And while the rice cooks...

Heat the fat or oil, add onion and stir till it starts to brown. Add carrots and stir fry together for about a couple of minutes. Add meat on a medium to high heat and stir-fry quickly as you add pepper, cinnamon,and allspice. The amount of pepper and taste, and cinnamon and allspice are recognized as if the chips are on a plate of salt. Once the meat is cooked, add peas and continue to fry for a few minutes notice. Season with salt, then rapidly to cover almost boiling water. Reduce the heat to low, stir and cook just discovered until peas are done.

Serve the stew on rice, peas. Have fun!

Using Hot Dogs in Recipes

People eat hot dogs for many reasons. I actually love hot dogs. Other people make them because they are a child friendly food. Still others make them as they are inexpensive and you can create a meal with a half package of hot dogs.

My kids have always loved hot dogs. We buy only the all beef hot dogs and over the years we have discovered many uses for hot dogs.

For a simple meal, grill them on the barbeque, add your favorite toppings and serve with a salad. When I make hot Dogs, I chopped ketchup, mustard and mayonnaise on the table, together with the sauce and onions. My favorite is the mustard and onions.

When the children were young, we tempura hot dogs. We would like to buy pasta at the store, and then coat and fry both hot dogs and vegetables. It 'was a great way for children to eat vegetables. We would like to offer tempura sauce and ketchup. I think kids like most anything dipped in ketchup.

Immediately cooled squirrel. Hot dog rollin each crescent and bake until rolls are done. You can also add mustard to the uncooked dough before rolling up.

Do you like corndogs? Make your own corn dogs by preparing a cornbread mix, and rolling the hot dog in the mixture. Add a bit of extra milk to make the batter a little bit thinner for dipping. Add a popsicle stick and cook until bread is done. While I enjoy dipping corn dogs in mustard, you can also dip them in ketchup and barbeque sauce.

Another favorite of mine are chili cheese dogs. We make a batch of chili, smother the hot dog with the chili and then add cheese on top.

A lot of people enjoy a casserole of baked beans with cut up hot dogs. You can also try barbeque baked beans. Both offer a very different flavor.

If you like bacon, try wrapping a slice of bacon around the hot dog and then adding melted cheddar cheese.

There are so many ways to enjoy a hot dog, and almost all of these recipes are kid friendly also.

Family Camping List

Let's see, we've got the "to do list", that one that never seems to get done and we sure put a lot into that list, then there's the grocery shopping list and it's usually written within the "to do list". I suggest making a new list, the "Family Camping List". Now let's see what that list would include, how about fun, getting away from the hustle and bustle, spending quality time with the family, challenging ourselves, getting back to nature. I think we might just get this list taken care of. When you decide to go on a family camping trip you usually take stock of the camping gear that you have around the house so you don't have to buy too much in order to make it an enjoyable trip. Unless you're going to be on the cover of "Family Camping" I suggest bringing the basics to base camp.

Your list of essentials to bring for camping should be: a sturdy tent with a fly, sleeping bags for everybody and sleeping mats for the kids. Bring an air bed for mom and dad so they can easily. Flashlights with fresh batteries, and even bring a little 'if someone leaves on their case. If you bring a lantern, make sure that Mom and Dad the only one who is active, you do not want little ones to burn for their curiosity. If you decide to cookout, check with the campsite you are moving, encourage propane, even if they have available, charcoal, propane is easily controllable andburns cleaner. If you have to buy a little grill they don't cost that much and you'll be able to use it more than once. You'll also need a hammer to pound in your tent stakes and an air pump for your airbed.

To make proper list for family camping it matters where you are going and how long it will take to get there, typically its best to take younger children camping, teens are usually involved with sports but if its in the summer time they should really experience what its like to rough it and those that are college bound might think it's a little beneath them. If your trip is going to be over two hours long you'll want to make sure the kids are entertained so you don't hear those dreaded words, "Are we there yet!?" If you have a DVD player built into your car you've got it made. If you know where you're going for your destination you might be able to find a DVD of the upcoming attractions, that might help the passengers get excited and anticipation of arriving somewhere fun will occupy them for a while.

Make sure to check the weather where you are going, don't just head out into the wild blue yonder, you're not pioneers, you're campers. Dress for the weather too, if its says it's going to be cold, believe it, even though you'll be in a tent, it's a thin piece of fabric that separates you from the elements. If its summer and you sleep without PJ's, you'll need them on a camping trip for sure. We used everything we brought but we forgot the hamburger patties so we had hot dogs twice, no problem, enjoying a meal outside is the best when everybody gets to help. I think you'll find that little ones are willing to help when mom and dad don't have any distractions to deal with. Camping can be a great family time too. Don't bring any board games that create competition, bring zip-lock baggies for collecting rocks and various things that you find in nature. You might even bring some books about nature so kids will have some application along with their information. Most of all, don't forget the ingredients for smores! You'll be the hit of the campout, its all my kids want to eat when we go camping.

Easy Fast Dinner Recipes - cheap and fast recipes

Have you just arrived home from a long work day and want to prepare something simple? You look in the refrigerator and the only thing that looks easy is the not-so-tasty frozen dinners, so instead you hop in the car and it's off to the fast food restaurant.

Here are some quick and easy to prepare delicious recipes:

1. A Quick Dessert

Ingredients:

- 4 Pieces toast
- 4 sl Cheese Nutmeg
- 1 1/2 c Applesauce
- 1/4 c Sugar

Direction:

- Add sugar and nutmeg to applesauce.
- Put applesauce on toast, about 3 tablespoons on each piece of toast.
- Lay a slice of cheese over the sauce.
- Bake in a moderate oven until the cheese melts. Serve hot.

2. A Quick Way To Decorate Cake

Ingredients:

- 1 pk Marshmallows
- Vanilla to taste
- Green food coloring
- 1 pk Red hots
- Box of cornflakes (4 1/2 c)
- White angel food cake

Directions:

- Melt marshmallows, add food coloring and vanilla.
- Add the cornflakes, stir until well coated.
- Spread this onto a cookie sheet, shaping into holly leaves.
- Place a red hot in middle.
- Let dry about 5 hours.
- Then top a white frosted angel cake with the holly leaves.
- Makes a very pretty cake.

3. A Real Easy Cookie

Ingredients:

- Graham crackers
- Pecan halves
- 1/2 c Sugar
- 2 Sticks cutter

Directions:

- Melt butter and sugar.
- Bring to a boil.
- Boil for two minutes ONLY.
- Place graham crackers on foil lined sheet.
- Place nuts on cracker center.
- Spoon butter and sugar mix over graham crackers.
- Bake at 325 degrees for 15 minutes on top rack.
- Cool completely before breaking apart.

4. Baked Mac and Cheese

Ingredients:

- 1 cn (10 3/4 ounces) Condensed Cheddar Cheese Soup
- 1/2 cn Milk
- 1 ts Prepared Mustard
- 1/8 ts Pepper
- 2 C hot cooked elbow macaroni or medium-sized bowl (1 1 / 2 c dry)
- 2 ts margarine or butter, melted
- 1 TB dried bread crumbs

Directions:

- In a 1 liter pot, combine broth, spices, milk, mustard and pepper.
- Agitation macaroni.
- In a bowl combine margarine and bread crumbs.
- Sprinkle over casserole.
- Bake at 400 degrees F.
- 20 minutes or until hot and bubbly.
- Makes 2 1 / 2 cup = 2 main course servings or 4 side dish servings.

5. Beef andRice Crisp

Ingredients:

- 1 lb Lean ground beef
- 1 c Coarsely-chopped onion
- 1/2 c Coarsely-chopped green pepper
- 2 tb Ketchup
- 1/4 ts Salt
- 1/2 ts Dry mustard
- 1 1/2 c Cooked rice
- 1 c Milk
- 1 (10 oz) can cream of Mushroom soup
- 1 1/2 c Shredded Cheddar cheese
- 1 ts Worcestershire sauce
- 2 c Corn flakes, coarsely crushed
- 3 tb Butter, melted

Directions:

- Saute beef, onion and green pepper in a large frypan until meat is browned; drain off any fat.
- Blend in ketchup, salt and dry mustard.
- Turn meat mixture into a 2 quart round casserole; spread rice on top.
- Gradually stir milk into mushroom soup.
- Stir in cheese and Worcestershire sauce.
- Pour over meat and rice layers.
- Combine crushed corn flakes and butter; sprinkle evenly over casserole.
- Bake in preheated 375 degree F oven 35 to 40 minutes or until hot and bubbly.

Makes 6 servings.

Healthy Bran Muffin Recipe
(Makes 16 muffins)

2 cups whole wheat flour

1 1 / 2 cups bran oil

1 1 / 2 cups oat bran

1 / 2 cup canola oil

1 / 2 cup Sucanat

1 / 2 cup honey

3 eggs, lightly beaten

2 cups rice milk or soy

1 Tbsp. Baking powder

1 tsp. Sea salt

1 cup carrots (from juice machine)

2 medium apples, shredded

1 tsp. Cinnamon

2bananas, mashed

1 cup pecans or walnuts, chopped fine (optional)

1 cup raisins (optional)

Preheat oven to 375 degrees. Beat oil, Sucanat, honey, carrot pulp, mashed
bananas, shredded apples, eggs and milk together. Add the wheat and oat bran
and let sit 10 minutes. Pre-mix the dry ingredients and fold into the bran mixture
until just mixed (don't overmix). Add the pecans and raisins. Fill muffin tins with
mixture (don't overfill) and bake for 20 minutes.
