Red beans and rice

Prepare for treatment of smacking - Red beans, rice and sausage. The secret is to cook slowly.

Ingredients:

1 bag of small red beans
2 tablespoons olive oil
2 medium onions, chopped (not too fine)
2 ribs celery, chopped
1 cup chopped parsley
1 small green bell pepper (optional)
2 cloves garlic, minced
Salt and pepper to taste
a pinch of red pepper
4 cups chicken broth, beans and 2 for 2 forRice
2 cups water
1 pound sausage, cut into small slices
2 cups rice

Preparation:

Rice
In a pot, two cups of rice, 1 tablespoon oil, 1 teaspoon salt, 2 cups of chicken broth and 2 cups of water. Bring to a boil, reduce heat to medium and cover. Simmer for about 15 minutes, then turn off heat and leave covered to steam for some time.

Sausage
Cut the sausage insmall pieces, about 1 / 2 cm each. On a piece of grilled vegetables in the open air (the kind with small holes that the meat from falling into charcoal), cook until the sausage browns arounf the edges. I prefer a good Polish sausage.

Vegetables
In a large pot heat the oil. Onions, celery, bell pepper stew, add the garlic so it does not burn. Add the spice mixture. Add 2 cups of chicken broth and 2 cups of water, thenAdd your beans and parsley.

With the heat to medium, cook for about 1 to 11 / 2 hours. Take one third of the beans and put in a steel bowl and mash. Then put them back in the mix.

The final step
Add the sausage and cook for another hour to an hour and a half hours on low medium heat. Serve over rice and enjoy.
