Different Ways to Grill Veggies
If you want to make a grilled veggie side dish recipe, you can either chop the vegetables into chunks and grill them, stuff them with other ingredients or cut them into small pieces and wrap them in foil packets. If you use foil packets, there are plenty of different herbs, spices and flavorings you can add to infuse your vegetables with flavor.
Another way to cook them is to use grill baskets. If you are grilling very small pieces of vegetables and you do not want to make foil packets for them, a grill basket is a good way of making sure your food cooks without falling through the grates on to the hot coals.
Recipe for Greek Style Grilled Squash Packets
This simple recipe combines wonderfully flavorful summer produce with Greek flavorings. The foil packages allow for easy cleanup and this recipe makes enough for four servings.
What you will need:
2 thinly sliced zucchini
2 thinly sliced yellow summer squash
1 teaspoon lemon juice
2 tablespoons grated parmesan
2 teaspoons olive oil
2 tablespoons chopped scallion
1 de-seeded, chopped tomato
1/4 teaspoon dried oregano
1/8 teaspoon black pepper
3/4 teaspoon garlic salt
1/4 cup pitted olives
How to make it:
Preheat the grill to medium. Arrange the onion, squash, tomato, olives and zucchini on an 18 inch square sheet of heavy duty foil. Mix the lemon juice, garlic salt, oil, pepper and oregano together and pour this mixture over the vegetables. Fold the foil packets around the vegetables and seal them well.
Grill the Greek veggie packets for half an hour or until all the vegetables are soft. Take care when you open the foil because the steam will be very hot. Empty the vegetables on to a serving platter, sprinkle the parmesan cheese over the top and serve hot.
